An Evening of Tapas

Tapas- Spanish for small plate, snack, finger foods. Enjoy a relaxing Spring evening with the Executive Chef Randy Jensen from the Angry Minnow. You will learn how to make a few of his favorite small plates for your next gathering. He will be preparing a Mushroom Tapas, a Beef Tapas and a Vegetable Tapas along with a sweet dessert Tapas to end the evening. Randy will also be serving up some Angry Brew to complement the different Tapas dishes that will be served. Get out of the house and join us for a fun evening of good food, brew and fun!

Demonstration and Hands-On
Sushi has gone from being an exotic food to one that is found almost everywhere in America. Learn the types of fish and much more in the comprehensive class on sushi, sashimi and nigiri.
Chris will have you making the rolls (if you want) so if you love sushi or just want to learn how the rolls are made this class is for you.
Chris will be making Tuna and Salmon Rolls along with the popular California Rolls with variations of these such as Spicy Tuna and Philly Rolls!
*This class requires early sign-up as the Sushi quality fish has to be ordered in. Class is limited to the first 12 students and you must sign up by April 1st! Don't hesitate if you want a seat in class sign-up today!
“Treat Daze”

If you are a busy mom this class is for you. Clara is known as the "Treat Mom" at Stillson Elementary School in Chippewa Falls. She will be demonstrating some great ideas to make your children’s school treats and birthday parties awesome, yet hassle free, with her fool proof easy decorating ideas. She will be demonstrating something from almost every holiday along with zoo animal cupcakes-cookie decorating ideas-easy unique cake decorating ideas and tips! If you have children or grandchildren this class is for you!

April Fool’s Class

You are familiar with the trompe l’oeil for the eyes (French for: deceiving the eye) but you will be experiencing trompe l’oeil for the palate!
Caitlin will make you think of the same old food in a new light! We can’t give it all away or you wouldn’t have any fun; let’s just say it is food that isn’t what it seems to be!! Mystery meal in a way!! Caitlin will be making several unique dishes that you won’t want to miss out on. You will have the recipes so you can “Fool” your friends and family too.

We all know wheat, corn and oats but what about quinoa, wheatberries and teff? These delicious and easy to find grains and flours are easy to cook, are tasty and good for you. Once you discover the possibilities with these great grains they will become a staple in your pantry. Being prepared:
*Quinoa salad with apples, walnuts and dried cranberries
*Wheatberries with current and almonds
*Swiss chard sweet potato and goat cheese tart in a Teff crust
*Bulgur and chickpea salad with sun dried tomatoes, feta and mint

The Birds and Bees

Today we will celebrate the humble chicken and the honeybee. Chickens are the chameleons of the culinary world. Used worldwide it lends itself to almost every method of cooking in every culture. Honey, the first sweetener before the discovery of sugar is suitable for both savory and sweet dishes. This class will show you how to use every part of the bird to create four great dishes, each featuring honey. We’ll incorporate the thighs in Roasted chicken with Chile-honey cinnamon rub, a whole bird quartered in Honey-Balsamic baked chicken, the legs in Spicy honey mustard sauce and finally we will stuff chicken breasts with minced rosemary and garlic and pare it with an apple, honey and fig compote.

Meatless Monday

During WWII, the Food Administration called for “Meatless Mondays” to aid the war efforts. Today, it’s increasingly popular to strike meat weekly from the menu but for different reasons. Eliminating meat just one day a week can improve the health of your family, the environment and is easy on the grocery budget. This class will offer meat-free traditions of the world, all of which offer tastes, textures and color so exciting that you never miss the meat.

Pizzetta Pizza

Join Susan as she teaches you the ins and outs of great pizza making. She will be using a pizza peel and our pizza stone to produce an authentic flavor. But the pizzas she is making are anything but traditional. Being prepared will be:
*Shrimp and basil pesto pizza
*Tomato, basil, mozzarella pizza
*Chicken, roasted red peppers with assorted cheeses
She will also be tossing up a mixed green salad with roasted beets and feta, avocado, toasted pecans tossed with our 18yr old balsamic dressing! Yum, yum….The secret to this great pizza is the dough. Susan will share her secret recipe.
